SWEETENER

Sweetener is known as a sugar substitute that is used as an alternative to sugar. It is widely used in the food industry, this is because by comparing it to sugar, sweetener can provide a sweeter taste in small amounts. Besides, there are two main types of sweeteners which are nutritive sweeteners and non-nutritive sweeteners.​

Both nutritive and non-nutritive sweetener is used as a sugar alternative to enhance the flavour or texture of the food. Nutritive sweetener is known as a caloric sweetener that will provide energy in the form of carbohydrate whereas non-nutritive sweetener contributes only little or no calorie when added into a product.​

For non-nutritive sweeteners, due to it provides a sweeter taste than sugar with little or no calorie, hence it is helpful for the people who are trying to lose or maintain their weight.​

Additionally, non-nutritive sweetener also provides a good option for people that have type 2 diabetes or people who are concern their sugar intake where non-nutritive sweetener will only affect the blood sugar level to a smaller extent.​

TASTE MASKING

Taste masking is used to inhibit the taste of bitterness by altering human perception. Adenosine monophosphate (AMP) is one of the bitter blockers that is approved by FDA and widely used in pharma and food applications. Taste masking is commonly used in the pharmaceutical industry to reduce or mask the bitterness of medicine.
